Comprised of a number of smallholder farmers, Esmeralda Cooperative is located in Chiapas’ Sierra Madres, host to rich biodiversity and varied microclimates, driven by dramatic elevation changes. Diverse temperature zones and abundant rainfall create ideal conditions for prolonged, nuanced cherry development. The region’s volcanic soil, rich in minerals and organic matter, provides essential nutrients. The cooperative consistently produces coffees of remarkable quality. This begins with meticulous hand-picking, ensuring only the ripest cherries are selected. The cooperative has also become renowned for its mastery of the natural process, a technique where coffee dries within its fruit.
